Banana Peppers

Anybody have a good recipe for banana peppers? I want to make them just like what you get in a jar at the grocery store or Subway (I hope that's not frowned upon LOL). I made some last year, and they turned out great. Now I can't find the recipe. Everything I find online is very similar, Vinger, water, sugar, salt, typical pickling recipes. I made some and included pickling spice and they were terrible (ended up throwing them out). I don't know if I misread the recipe or what, but I don't think pickling spice is good for banana peppers. It tasted like what you'd want pickled eggs in. It could be that I just screwed up with the pickling spice but wondering if anyone has a good recipe to try before I waste another good haul of peppers.

TIA

I think your pickling spice might be the problem. Are you doing a full can that are shelf stable or refrigerator canned good for a few months? The ones I pictured are refrigerated.

Not water bath canning, just in a jar and refrigerated.

My recipe is:

1 cup water
1 cup vinegar
1 tablespoon salt(canning/pickling)
2 tablespoons sugar

Enough juice for two pints packed tight, I do add some sliced onions also. Try a small batch. You can always adjust salt and sugar to taste. I leave in fridg. 48 hours before indulging.

The recipe that I posted needs to be boiled and poured over the peppers while hot then seal and put in the fridge.

Add a little peppercorn, dill, celery seed and garlic. Can try sea salt. Add something with tannins(grape/oak leaf) in will keep pepper slices more crisp. I like some onion slices in mine.
