Well... Actually, it's easy as pie to remove a coyotes head with just a knife. Have done it hundreds of times.
But! For bounty, all you need is the ears - a 15 second job to scalp the coyote, and the lower jaw. If I'm out for serious bounty hunting I take a pair of tree loppers. Snip-snip is all it takes. Can process a coyote for bounty this way in under 30 seconds.
