Old fashion bread pudding. Getting ready for Easter dinner and thought I'd make something special for desert.
I bake bread once or twice a week and save crusts and ends for bread pudding, lots o raisins, cinnamon, eggs, sugar and milk. Tomorrow I will whip up a Carmel topping.
I use a 9" round casserole dish These are rough measurements.
Semi dry bread chunks(no bigger than 1") to nearly fill dish course bread, crusts and heels, whole wheat works to or a combination of wheat and white. My wife's friend made it with left over plain donuts from the lunch room, cut back on the sugar with donuts.
Two handfuls of raisins
Layer bread and raisins, layer of bread, raisins, bread, raisins and bread.
Melt two Tbs of butter and drizzle across top layer of bread.
Mix 4-5 large eggs (if store bought LARGE eggs look on the small side I use five), two cups whole milk, 3/4-1 cup of white sugar, 1 rounded tps of cinnamon(I like cinnamon) and 1 tps of vanilla. Pour over bread and raisins.
Bake open at 350 degrees for about 1 hr. I'm high here so it takes longer I bake to internal temp of 175 degrees it took 1.5 hrs yesterday.
Good eating
I've made this as a breakfast dish with cooked breakfast sausage chunks, leaving out the raisins, sugar, cinnamon, vanilla and add salt and pepper instead. A little sage or sage flavored breakfast sausage works.
