Chef's Choice Sharpeners

I am one of those poor souls that can never get the edge balanced while sharpening my knives. I can get them sharp enough to get the job done, but never to my satisfaction.

I plan on doing a little trapping this coming season and predator calling. I know I will need to keep the knives sharp so I finally broke down and bought a Chef's Choice sharpener (the $100 model) at Gander Mtn. Let me tell you, for me it is worth the money. It puts a no brainer razor edge on all my knives and even the cleaver!

Not trying to be a commercial or anything, but just passing along my satisfaction with a great product for those who might be whet stone challenged like me.

My parents have one of these sharpeners, and I agree, they are definately worth the money. I have noticed that you only really need the 1st and 2nd stages of the sharpener. The 3rd stage doesn't seem to add any additional sharpness and in some cases seems to dull the blade a bit.
 
Thanks for the review. I've been looking into them as well, because try as I might I can't get it sharp enough for my satisfaction with stones. Sounds like it's worth the money. Now the real question is, are the higher priced models worth the extra $$$?

My sharpener only has the two stages and as I said it was about $100. I think there is one that only has the one stage and if I remember right was around $59. I opted for the 2 stage because I wanted the hone. But the knife is sharp after the first stage, but you can feel that there tiny burrs that need to be knocked off.
 
I have one of the two stage models. One of the diamond hone pieces fell off of it. It's setting under a work bench, I just didn't have the heart to put it in a garbage can yet.
 
These may be great sharpeners but I prefer my http://spyderco.com/catalog/details.php?product=77 It is small and requires no electricity. It puts a great edge on all knives. I have even sold many knives on this board with questions on how I got them so sharp. As for the finishing stone many guys including myself have mistakenly quit using the finishing stone because it appears to dull the blade. This is only true at first. If you keep going it progressively gets sharper to the point of disbelief. Also after time you can learn to weed out real cheap knives quickly by sound/feel. A good friend passed this info to me when I asked about his sharp knives and told him about my inability to sharpen.

I would sure have contacted the company about that. That reminds me, I need to send the warranty info in.

Here is a photo of the best knife sharpener I have ever seen. I paid ten bucks for it, and I would buy a few more if I knew where I could find one.
