We cut the back straps out of a coyote we skinned just to see what the raw texture felt like. It was stringy, sticky and smelled like poop. Bout lost my sh!t just messing with the meat hah.
I shot a couple bobcats one weekend in Northern AZ at L Bozinskis campout. One of the guys in the camp took the backstraps and cooked them. Several of us tried them. They tasted like little pork chops.

Just thinking about coyote jerky, puts me in the Christmas spirit.
My inlaws are really into giving homemade gifts so I have an old smoker that I use just for jerky from coyote, badger, feral cat,etc. Wish we had possum here.I'm the guy with the biggest smile over the holidays. It truly is better to give than receive.
An Asian restaurant in Edmonton got busted with coyote carcasses skinned and hanging in their walkin cooler. I asked the local cahe owner why it wasn't on his menu. He informed me that the local 'white' guys are too cheap. Couldn't afford it. Very expensive and reserved for special occasions.
When I asked if he would use Ginger in the recipes, he said "You Crazy!!!! Your wife would kill me, that's her favorite cat."
Bobcat is super good and does taste like pork. We take the back straps and any other salvageable meat parts off the ones we kill, place them in a marinade over night and either pan fry or BBQ...very tasty.
I'll pass on the coyote. I saw the Meat Eater episode where he tossed the whole dog on the fire to burn off the hair...I guess if you're going to eat sh**ty meat, it might as well smell sh**ty too.
my son and I have had coyote back straps many times. my wife and I have shared them with deer hunter friends who liked them. a coyote and a bear have just about the same diet and a lot of bears are eaten. don't knock it till you've tried it.
