Field Dressing doves?

Not sure how others might do it but I find the "V" just under the neck with my left index finger while holding the dove breast up with my right hand. I force my left index in to the bottom part of the "V" and pull the breast and wings away from the body. I either twist off or take shears to the wings close to the breast. Then pull off the remaining skin and feathers from the breast. Bag it and repeat.
 
1. Snap the head off
2. Twist the wings off (I use garden sheers now)
3. Push your thumbs up under the breast area on the front of the bird and split it apart, basically separating the breast from the guts and back of the bird.
4. pull skin/feathers off
 
I break the wing joint close to the body hold the dove in my left hand with the wings folded back. Force my thumb up under the breast bone all the way to the top and lift it towards the head. Then pop out the breast in one quick motion. Most of the time all of the insides stay and the wing joints pop off. Skin and wash with water and move on to the next one.
 
Peel back the skin from the breast and fillet the meat off. You have 2 boneless fillets and your done.

I can do that while you are doing all that other stuff, and don't have to worry about cooking a bone.

I do the same thing with ducks, geese and turkey.

if not cooking at the motel but taking them home. break one wing off at the body. ( must have one fully featherd wing during transport) then pull the breast , skin and wash. fillet later and cook with tabasco ,jalapeno, cream cheese and bacon!! had some with lemon pepper and bacon at the motel. great!!!
 
pluck the feathers off the breast, then hold dove in hands with your thumbs on the breast, pull down (towards the sides) with your thumbs and the skin will split, exposing the breast meat, then take you thumb and insert it under the breast plate and pull up all the way, then take you thumb and insert it in the hole under the gullet, and twist, the breast will come out and the wings and all will stay with the rest of the bird, all that is left is to wash off any blood and feathers and put on the grill or in the freezer. if done right, it takes all of 30 second to clean a dove./ubbthreads/images/graemlins/grinning-smiley-003.gif
