Both sides of the duck breast, 1/2 red or yellow bell pepper, 1/2 large onion, salsa
Slice breasts across the grain about 1/4" thick. Slice red or yellow bell pepper lengthwise about 3/8 thick same with the onion. I use a wok to cook over the gas flame on my grill side burner. I use olive oil and saute peppers and a onions til they start to soften turn up the heat and add duck breasts. When the duck is nearly cooked, I add 1/3 cup salsa, salt and pepper. Continue cook until the juice of the salsa has cooked off. Serve with spanish rice, a small green salad, fresh browned flour tortillas, a slice of lime and sour cream if that appeals to you.
Enjoy
This morning I scrambled an egg and combined the egg, left over onions, peppers and duck on a warm tortilla for breakfast.
