I bet they're listing G1 and G7, hence the different BCs, because that would be about right for that bullet, in that order.
I'd probably just go with the slower of the two velocities. I'd really be more concerned with getting the elevation right.
If you could shoot your rifle long range and give them the actual comeups it would be better.
Although, anything big enough to require a 7 mag, in my opinion bull elk and large bear, is a pretty [beeep] big target and will leave some room for a slight vertical error.
