I had guests over the weekend and made pork roast. The only roast I could find was overly large so there was a lot left over. Tuesday I made hot pork sandwiches and still had a bunch of pork left. So this morning.i made a batch of Chilli Verde w/pork. It is a great base to have in the freezer, add potatoes for green chili stew, a great topping sauce for burritos and great for Huevos Rancheros

That's the tough part about my 2 person home. I don't know how scale back. I always cook large. I pitched out probably 2/3 of the pork butt I smoked a couple weeks back.

I spent the morning making some spicy pickled eggs and sausage.

That looks good, if the winds die a little here I hope to get out and shoot some carp for pickling make some extra pickling sauce and make a couple jars of pickled onions too.
