I finally got some spare time. So I made a batch of sage javelina/pork breakfast sausage. I ground it pretty coarse as I don't care for fine ground sausage. This turned out good really well I might try the next plate smaller next time.
I used 2 lb of javelina and 1 lb of fatty pork. I bought a package of fatty country ribs and trimmed the fat and some meat to make the sausage the rest I slow cooked for BBQ pork sandwiches.
Here's the recipe adjusted for 3 lbs
Enjoy, it should work well with venison.
