Coyote meat is actually quite good.  Hunters pulling off the hide and leaving the carcass for the birds are missing out.


Don't overseason your coyote meat, let the natural flavor come through.  Over drying, or over cooking is a mistake also, keeping the natural juices in the meat will enhance the flavor.  Young coyotes with a thin layer of fat on the rear haunches make the best jerky or steaks.  Enjoy!
