I made jerky out of beaver once. It was really good.I have to agree with the scavenger thing.If your gonna do it, I would try to get one where the 'yote population is low. Less chance of mange or distemper.Also I have heard that the thin layer of muscle across the back is the nasty part.Check with a veterinarian too.Might have something to add. Well, Bon Appetite!!!
