Does any of you guys have a good recipe for Deer Jerky? I am going to do it on the trager. I just cooked some backstrap and it was great. I want to try Jerky now. I have the meat to do it. Please share your favorite recipe.

Marinate overnight in tabasco/redhot, worshersire sauce, Montreal steak seasoning, black pepper, seasoning salt, garlic powder, quick cure and dry.

I have a Traeger too. Awesome unit. Everything tastes better cooked on one.

I've got numerous recipes for jerky, but after trying all kinds of methods, I've narrowed it down to using this:

Very easy to use and to me (and to other jerky hound family and friends of mine!) it is as good or better than any other recipe I've tried. Lot's of different flavors too...

I use tenderquick mixed with powdered beef flavoring. I cut the meat about 1/2 inch thick and layer it in a tub and sprinkle a layer of the tenderquick then place a layer of meat, alternating till done.

I place a layer of saran wrap on it an place it in the fridge for 5-6 hours, depending on thickness of meat the thinner the meat the less time to soak. Never over soak it will be too salty.

I then rinse the tenderquick off under running water rubbing each piece between my fingers and then lay it out on a towel so none of the pieces are touching eachother. When full I lay another towel on top and continue till done. I then roll up all of the towels and place the roll in the fridge till I have time to smoke it.

I smoke it in big chief smokers with hikory chips for 8-10 hours depending on outside temperatures. I then vacuum pack it and put it in the freezer and hope it lasts till next hunting season.

I have also basted honey on the jerky after I am done smoking it but before it is done cooking.

I used to pay an older gentleman make my jerky for me and he hot tired of it and finally gave me his recipe. This recipe is slightly modified but it makes great jerky.
