Alright, I hate to reveal how ignorant I am, but, well, I'm ignorant. What do you do with bear meat? Is any of it, um, palatable? I live in Nebraska. We have teddybears and they aren't generally speaking, edible.
It depends on what they have been eating. If you get one that's been eating acorns, they aren't too bad. If you get one that's been eating apples, they are good. One that's been eating pinons and juniper berries, has a pine flavor and can make the kitchen smell like a forest when it is cooking. I like to cook the "pine" flavored ones on the grill. If they have been eating at a dump, they don't smell good when you are skinning them, and I have never tried eating one from around a dump.
Bear meat is not only palatable but very good. I like spring bears because they are less fat. I trim as much fat off as possible and cut as many roasts as possible. I don't do steaks because I like rare steak and bear should be well cooked. I also have pepperoni made, excellent!
Fish and Wildlife Branch recommend freezing Cougar and bear for 60 days and /or cooking to well done. The roasts I cook low and slow 250degrees. always tender.Most people can't tell it from beef. Some say it tastes like pork..... I doubt they've tried bear. Looks like and tastes like beef.
I also don't gut bears. Skin em', filet the backstraps, cut the shoulders and hind quarters off at the joints. No muss, no fuss.
I love bear meat. I hunt them every chance I get and take them for the meat and not the hide.
They do suggest you cook them completely done but to me that's a major sin. I cook mine medium rare. I think as long as you get wild bears eating wild food, you'll likely be OK. I'd avoid eating dump bears that way though.
I think they taste like a cross between beef and pork leaning more toward beef. Very good!
Right on! I believe we’ve done this here before. In addition to leaving the dump bears alone, stay away from the fish bears; meaning bears that feed on spawning salmon. Apple, berry, and acorn fed bears are fine. Stews and roasts are the way to go. Also sausage, salami, etc. Remember to render out plenty of lard. Great for making any kind of pastry.

Last year was my first bear. I went to Idaho, and there you are required to salvage the meat or I never would have done it. But I had it processed and it was actually decent. I wouldn't let one go to waste now thats for sure. Here in Wyoming you are not required to keep the meat, but I sure would.
My favorite bear receipe is Bear Fajitas!! One of my all time favorite books is one called "Meet Mr. Grizzly", by Montague Stevens. He mentions frying up "bear steaks and onions" several times, when talking about catching black bears. Mountain lion is also very good, especially in a good green chile stew.
One way I prepare bear is to marinate the steaks in burgundy wine with a little onion and pepper over night. Then I use the marinate as a gravy base. That along with some mashed spuds make a great meal. I also make bear jerky by boiling the thin cut meat in beer and spices before drying the meat like normal jerky. This will reduce the risk of picking up Trichinosis
