I wanted to make a post here to get some peoples opinions on the best clothes to wear while hunting, including all layers.

I'd like to start with this:

What is better, long johns or polar fleece or both? I have been wearing long johns all my life but I'm thinking of getting some polar fleece now as well to wear underneath my pants.

Also what about pants? Some folks up North told me I should be wearing wool pants and I found some nice ones from Bemidji Woolen Mills that look nice. I'm looking for something that is going to keep me warm and ultimately let me remain stealthy..
 
Wool is good, very good indeed, even when wet at keeping you warm! I currently don't wear wool, other than just wool socks, but one of these days I may go to wool. I have to wear out my Cabela's silent suade (sp?) breathable waterproof stuff first!
 
When I lived up in NW Minn I lived in wool from Bemidji Woolen Mills, still have a couple or three coats and a couple pairs of 32oz bibs. The snow up there isn't wet and wool works great. Since moving to Western WA it's synthetics and Gortex, EVERYTHING here is wet and muddy. I still keep the wool for deer hunting trips back there.
