Take your catfish fillets and soak in very cold water for about five minutes, this will drain out any excess blood. Then put into a bowl and add lemon juice and cajun seasoning and put into the fridge for half an hour. Drain well and put into a deep fryer with vegetable oil at 320 degrees for about 5-8 minutes. You can also dust them in flour before you put them in the fryer if you desire. I prefer them without flour.
