I just bought this can of whole chilis for stews and chili verde.

They couldn't source enough chilis in hatch this year

The place i use to buy a bushel of chilis from went under and i dont trust the grocery stores and their flats that they sell and roast. Not to mention my stomach doesn't allow me to eat as many of them without revolt as it use to. Been using these sparingly. I like hot, the wife does not. šŸ˜’

I spent a month in New Mexico last summer and got hooked on their hatch chili cheeseburgers and Huevos Rancheros. As soon as I got home I ordered a case from this place, roasted and froze them in packages of 3 each-perfect for 2 meals. I was very impressed how they pick and ship right away and the quality was great. A 25lb case lasted all year and I still have a few packages left in the freezer.

We tried someone's packaged "hatch chili" dish a couple years ago and wonder if it was the real deal. It was OK, but did not live up to what we were expecting. Of course you can't judge the peppers by one recipe.

If you like hot, you'll like this recipe (Of course, you can adjust the heat to taste.):

Salsa Verde Muy Sabrosa
Spicy Green Picante Sauce

1 1/4 Cups Mazola Salad Oil
6 teaspoons salt
15 cloves of garlic
4 large onions
1 1/2 cup vinegar
7 lbs. Tomatillos (husk tomatoes)
2 # Cerrano Peppers

Finely chop tomatillos, onions, garlic and cerranos in food processor and blend in large pot. Yields 5 1/2- 6 quarts.

Thanks, Lance, that explains why I was disappointed in the dish that we tried. I like pretty hot spices and it was not as hot as I was expecting. According to the chart below, they are a much milder pepper than I expected.

To me, Hatch chiles have a better flavor than seranos and usually are milder althogh some can be quite hot. Often they are sold by mild, medium, hot, extra hot.
Bluedeacon is from the area originally and likes the ones that blister your mouth and your arse.

Yeah, some peppers are just hot, others more flavorful. I do like those in the range of jalapeno and serrano, the chile de arbol is about as hot as I enjoy.

I love the taste of chilis, but I like to be able to taste the pork or beef and all the ingredients that make up the dish and not just the heat. When I use tomatillos, I cut them in half and put them under the broiler till the out skin starts to brown, adds to the flavor, just like sauteing onion to slightly translucent before adding them.

If you want Hatch chili, grab them soon! Between the drought and the recent floods, farmers are expecting half the crop this year…
