I made jerky out of beaver once. It was really good.I have to agree with the scavenger thing.If your gonna do it, I would try to get one where the 'yote population is low. Less chance of mange or distemper.Also I have heard that the thin layer of muscle across the back is the nasty part.Check with a veterinarian too.Might have something to add. Well, Bon Appetite!!!
 
I m new to the forum, Simon 445 if your running out of meat got about 150 lbs of geese and duck and about another 150 lbs of deer and moose, partner take as much as you can....all kidding aside From what I heard carnivores are not made to eat other carnivores(Yes I know humans are omnivores)...never seen a coyote or fox eat one another....there;s gotta to be a reason
 
Ill take the meat, lol, and yeah I know what ya mean, but I have heard that coyotes will eat one annother, which is kinda weird, cuz thats like canibalism,

I would try to get your coyote for eating soon, because after about mid-January they get a little tough and lean. During breeding season the males are poor eating. Coyotes eating off carcasses or hanging around calving areas are still pretty decent late in the winter.

Most of the coyotes my family eats are from November thru early January. I usually try to wait until the fur is prime before shooting many coyotes, that way you make some extra cash on the fur and stock the freezer with meat. It's tough to pass up a tender September pup though... We eat about two coyotes per month and the rest I give to families who eat them also.
 
Coyote it's not to bad. A good way to cook it is to stew it for six hours with a leather boot, then throw away the coyote put on the boot and kick your own [beeep], what the hell you been smoken boy?
 
Somethings just arent meant to be eaten,(more than once at least /ubbthreads/images/graemlins/smile.gif) but hey if its yote jerky thing, go for it.
 
OK here is the recipe: 1cp soy sauce,1cp brown sugar,1cp water,1tsp black pepper,1/2tsp ginger.
I use this on beef,Deer,Elk,chicken and salmon. for most things soak it for 24hrs as for coyote maybe 3-4 weeks.just joking.

I know 2 guys that say racoon tastes like pork but coyote HMMMM?????

Would you guys believe that I am mentoring young Simon and that he might actually try to "jerk" some coyote. I'll have to think twice before I ask him what he brought for lunch!! Lol!

Not sure about making jerkey out of it but you might try this (used it on my last javalina)..... Take the back straps and loins out and cut them up into small 1 inch cubes. Mix up one large bottle of Jack's barbaque sauce with 4 table spoons of salt along with one bottle of red wine. Stir it up and then place the meat into a large sealed container and pour the sauce over the meat. Let it sit in the refrigerator for two days. Then place the meat into a crockpot and cook it on the lowest setting for 6 to 8 hours. After about 8 hours in the crockpot take the meat out and dump it into the trash and eat the crockpot! /ubbthreads/images/graemlins/tongue.gif It will taste better than the meat! /ubbthreads/images/graemlins/ooo.gif
 
Ok guys, I have to say this. Cougar is some of the best wild game I've ever eaten. Soak it in milk and egg overnight, flour and fry. Shake a little salt on it when you take it out of the skillet. Bobcat is ok too, fixed the same way, but it seems to have an aftertaste that comes up in about 30 minutes for me... Just have a late dessert and you'll be fine. Having trouble with the thought of eating dog though... But, if someone had a recipe that was good, and cooked some, I would humor them and try it.
 
I used to eat coyote all the time but I quit after I broke my shoulder when I rolled off the couch while trying to scratch my ear with my foot!
 
Now I've tried raccoon and muskrat and have considered foxes,but never a coyote.Though a guy who works at the gun shop with me,swears he's eaten coyotes, personally I'll stick with beaver!
 
I ate dog while I was in Pohang Korea. It came in small slices and ribs with dipping sauce. Add a bottle of Slojo with Coke and mmmmm good.
I'd never eat a coyote though.
 
Mt. lion is very good, it’s a white meat taste much like pork except it’s very dry, I had it a burrito served with green chili and cheese over the top, I’ll eat it again.
The coon I made was in a stew and texture is also like pork with a lot of fat but the after taste is more like a bear, a lot of work and I didn’t care for it again.
I can’t imagine coyo can be too bad, just like anything else, I like to try it once, if don’t taste good ,I won’t eat it again.
