oregon jackrabbit- what about eating them now

I wasn't sure if it was having an R or ending in R. I guess in most places that have winters, it probably wouldn't matter much. Here in AZ, April can be pretty hot, so I would probably modify that a bit out here.

All of that said, I did some asking around and searched some stuff on the internet and it seems common sense with regard to eating ANYTHING would apply. By that I mean, if you cook the meat completely you should kill off anything that might be living in it. Same would apply for anything you buy at the store.

I just have to get over my personal prejudice to the buggers. I managed to do it with dove (which to me where just nasty wild pigeons) so I guess with enough effort I could probably eat a jackrabbit.
 
Knew some guys years ago that used to shoot them and make sausage(mixed with pork just like venison). Claimed it was good and to the best of my knowledge they're still around.
 
I saw a recipe for Jackrabbit stew.. didnt know if I wanted to try it, but some like it. I prefer leaving the Jacks for the Coyotes, for an easy meal.
 
I used to live in arizonia and I actually prefer the Jackrabbit to any cottontail. I can't remember any way of cooking them that turned out bad. I have cleaned them and watched the tapeworms squirm around but then that sort of thing happends in cottontails also. The jacks are not tough like some people would think. The key to eating these bunnies is to par boil them with seasoning and then turn off the heat and let them soak in the water until it is completly cool.Then fry um. [image]

i've seen too many tube worms and parasites in both coyotes and jackrabbits to eat either one of them, but i'll eat cottontails during the winter
 
In 1963 I was in the Navy on a ship in Kalifornia. My buddy from Deshler Neb. took me back to his house for 20 days leave. First time I ever saw a jack rabbit. Asked his wise old dad are they any good to eat. He said absolutely not. I said I'd like to try a young one. Shot one that day and almost threw up trying to cook it. Do not eat Jack rabbit...I don't think even coyotes like them, they just eat them to survive. Fun to shoot with a pistol tho. gal you guys must not have many jacks we knocked down 78 two saturdays ago in about 3 hours. but that was in our honey hole /ubbthreads/images/graemlins/smile.gif
