I have never paid anyone else to process any of my game. My dad taught me how to do it, and I have 4 piles at the end of the process. Grind, steak, jerky, and roast. It usually takes me a few hours to do a deer. I can only dream of doing a moose or an elk someday! I don't trim my grinder meat much at all, I try and take off at least 90% of the fat but I am not super picky. I am always worried about getting my own meat back and that is the main motivator in not taking it to someone else. I do my own mixes for the stuff going to the grinder.
