Never tried Snows so can’t help with that.Any different from a Canadian Goose? We use those for dog food.
But… Years ago I stopped killing geese (Canadas) because I couldn’t eat the things no matter how I cooked them. Then I tried goose breast pastrami. They are awesome. The thing with goose in my opinion is that you have to make them not taste like goose!
Corn or Dry brine those things for a good while and rub them with a good pastrami rub and smoke them with your favorite wood. I prefer Alder but Cherry is a close second. Be prepared to beat your FRIENDS away with a club! They’re going to beg for it!
