They are about the cheapest $$$ factory loads to buy and tend to be accurate. That's why the popularity!
Been in on a " few" coyote hunts and the V- max is by far ( other then FMJ' s) the worst KILLING bullet I've ever seen!!!

There are SO many better choices!.
A coyote ain't a prairie dog.

What do you recommend?

A lot of guys like the Sierra 55gr Game King, #1365 I believe it is.

I agree, I've been trashing any varmint bullet for coyotes, I've seen vmax glance off shoulder blades and take all the fur with. I've seen 52gr Berger HP stopped by a coyote femur, the base of the bullet fell out of a fist size two inch deep hole. Junk.

My choice the last 3 winters has been 65gr SGK, excellent accuracy, will easily travel through any bone and they're the best on fur, plus they hit like a brick.

Borkon is right. V-maxes are a very accurate bullet. Shoot well in a lot of rifles, but if you start shooting a lot of coyotes with them you will get nasty splash wounds. Sierra web sight says the #1365 bullet is best for higher velocity like the the 22-250.
Not sure how it would do at .223 velocities.
