You dont want to discard anything on the face, but you dont have to have it purfect for a wall hanging either.
Thin the face down as much as possible while fleshing, being careful not to cut through the whisker folics, youll be fine. When skinning you'll want to cut as close to the skull as possible. Sometimes its easier to start the face by going inside the mouth and cutting along each gumb line, top and bottom jaws.
The nose, again cut as close to the skull as possible. You'll feel the skull with your knife and if you tip your knife away from the skull slightly you'll follow that gradual slope towards the front lip that the skull makes.
Fleshing you just cut as much cartiladge out as you can while attempting to turn the nose inside out. Taxidermy nose handling is a bit different.
Paws if left on you'll want to skin down to the last knuckle on each digit.
I dont care to have the paws on wall hides, I think they take away from the overall appearance but that's just opinion.
