Last week I did short ribs.

This week.a Walmart chuck roast often referred to as poor man's brisket. I keep it simple, Walmart's Great Value honey-dijon mustard binder and a rub of 2parts coarse kosher salt, 2part coarse ground black pepper and one part onion power for the dry rub. Smoke open at 225 till internal temp of 150 and then wrap with a half cup of apple juice and cook to 205-210.

Today I made a batch of Amish potato salad.

Walmart chuck roast on the smoker is part of my regular rotation. I go for the store bought potato salad though. Yours looks better!

brisket was the cheap cut, LOL I guess it still is. $50 bucks for 4 new yorks at walmart is the norm these days. I guess I need to do more pork butts. I just rebuilt my traeger with everything new but the control panel and the auger itself. Cost me about 60 bucks and the smoker runs better than ever.
