SW Oklahoma hogs

For those that said they has tried to eat them and they were nasty, was that a boar or a sow? And what was the preparation?

I have eaten a lot feral hog. I process my own. I generally make pan sausage. I don’t fool with boars and stick to sows but know plenty who will eat them boars. They are plentiful enough here, I just stick to the sows. Smoke sausage is hard to beat, but labor intensive. The main problem with feral hogs is they are generally lean especially when compared to tame pork. When making smoke sausage you usually have to add tame pork trimmings to keep from having dry sausage. I don’t add extra when doing pan sausage as it being lean is not a problem, but you can fry 2 pounds of pan sausage have less than a teaspoon of grease in the skillet. I am usually adding it to chili or other recipes. Pork chops and steaks tend to be tougher as well.
 
It’s hit or miss here on both boar and sows. It’s those misses that just have you leaving them all for the buzzards. Sometimes the buzzards eat them, sometimes they don’t.
Most of my issue is it’s generally LATE at night and I don’t have time to fool with them.
