Coyotes are selective eaters and probably like a little variety in their diet when it is available as much as we do. He is preparing a nice dinner of rabbit with a side dish of corn on the cob.
Coyotes will eat anything that doesn't bite back and lots that does.
A few years ago a farmer next to the ranch I hunt planted a huge field of watermellons. Found the watermellon patch by following the very colorful (and plentiful) coyote scat.
Based on the plentiful red scat, it must have been quite a party, sure sorry I missed it!

I threw a dead rabbit near that spot last night so that is possible.
