I've never trapped, but always assumed it was from trapping. I have heard the same thing though, that missing body parts are more than likely caused from bullets.
I trapped coyotes back in the day. Never a trap injured paw ever but I did have one chew on his paw once. If you check your traps regularly and don't use improper equipment it doesn't happen.
