you all eat channel catfish dont you? Pork is pretty nasty too. Lots of parasites in pigs...I still eat them. Never had Coyote, but I did get tricked into eating fried housecat by a guy i went to college with that was from the Phillipines. Tasted almost just like fried rabbit (looked like it too).
 
I grew up in Southeast MO and tried eating just about anything that walked, crawled, flew or swam. About the most exotic thing was squirrel brains & eggs.

Now, in Utah, I have some employees from "way south of here" that have requested the carcass next time I get a coyote. They want to make chili rojo. I will let you know how it tastes, but that will probably be next fall.
 
I'm a big fan of Albertson's for my groceries. Dominoes pizza is pretty good too. You can have ALL my coyotes, fox, badgers etc.. Hell, you can have my mule deer too.

I had a friend that wanted me to get him a coon to eat. He stipulated that I leave the feet on, if I skinned him. Didn't want some one passing a cat along to him.

coyote backstrap will work in a pinch, strong flavored but tender and not all that bad, look at me I need alot of protein.

Cut mine thin, fried in a little butter and olive oil. Some lemmon pepper and cajun spice. I actually prefered the ham to the back strap.

i have heard they are good eats. could you post the recipe you used?

Sorry, I just now saw this post.

I put salt & pepper on as a rub & grilled it real slow. This was the first time that I have tried bobcat & I didn't want to "dress up" the taste.


Like crapshoot said, I think it would be better if it was fried.

Either way, it has a taste that is very similar to pork. Don't over cook it & enjoy!
 
I have eaten it on several occassions. I take only the hind quarters. I make a stew with it similar to beef stew. My opinion is that it was pretty good, like a cheep cut of beef. However I don't think I would want to cut a steak off and eat it.
 
I would just about be willing to put monwy on it that a wild or domestic Hog either one will eat anything a coyote would. I eat pork all the time but just cant get past the thought of the coyote when I know I have plenty to eat. BUT!!! I would eat a coyote or at least try to before i go hungry and probaly not wait to I am to the point of starving. If I get into that place I would probaly cook it till it is well done and then cook it about twice that long again. I like most of the other of you have grown up knowing what is food and dog has never been on any menu that i have saw, but in countries where it is they don't think twice because it is food no differant to them than beef to us. My grandfather told me he used to eat groundhogs and squirrels back when he was a kid in the depression. Said they had the odd cat, but never a coyote or dog.
