I know this sounds weird but I would like to try it anyways, just once. Use the coyote, and make jerky out of it, just to see what it tastes like, what do I need to do to insure I won't get a disease or anything, and do any of you know of any recipes. If you feel that this poses a strong health risk, please tell me, as I would rather skin and leave, then die young,

I'll have to admit, thats the most "HARD CORE" coyote question that I've ever heard.

Here's my question,
For you guys that have read western novels. Louis LaMour has always stated in his books that cougar meat is the best there is.

Has anyone tried that?
 
Hmm,coyote jerky /ubbthreads/images/graemlins/shocked.gif.I would just use a regular jerky recipe and then,here's the important part /ubbthreads/images/graemlins/smile.gif.Find someone,not your hunting buddy,and have them try it out and if they are still standing(give them a couple of hours for it to set in) /ubbthreads/images/graemlins/tongue.gif,then maybe you might try some yourself.Good luck with your experiment.take care,daveyboy
 
Check out Happyjack's reply to the sausage recipe thread on the Big Game forum. Personally I'll stick to deer for my jerky.
 
Several years ago I went to a Trappers Rendezvous where someone had cooked up some coyote. I really wasn't bad. Surprisingly. I have no idea how he cooked it. I wouldn't think health concerns would be an issue....mental maybe...

I am pretty sure there aren't any health concerns that would make it any different than processing a cow or deer. For me I think it would have to be a survival situation for me to eat it and will experiment if that situation arises.

As far as a recipe, I would start with something along the lines of Louisana Hot Sauce! /ubbthreads/images/graemlins/tongue.gif Let us know how it turns out. We need to know what to add to our survival bags. /ubbthreads/images/graemlins/grinning-smiley-003.gif
 
It's not for me, but give it a try. I had some BobCat BackStraps about a month ago that I cooked up and they were absolutely delicious..

Coyote meat is actually quite good. Hunters pulling off the hide and leaving the carcass for the birds are missing out.

Don't overseason your coyote meat, let the natural flavor come through. Over drying, or over cooking is a mistake also, keeping the natural juices in the meat will enhance the flavor. Young coyotes with a thin layer of fat on the rear haunches make the best jerky or steaks. Enjoy!
 
I think I just threw up in my mouth! /ubbthreads/images/graemlins/laugh.gif Knowing what those dogs smell like after skinning 'em, I wouldn't want next to my potatoes. But if someone jerkied some up, I'd try it...
 
Coyote, Bobcat and Mt Lion are all good the Lion is the best.Coyote I can do without but I think it is just in my head....stinky, fea infested little guys anyway.
 
I would have to disagree with you about the cougar being any where near palatable.

About three or four years ago one of my buddies shot a cougar, we decided to try some backstrap. (also smoked the ribs, but that didn't get anywhere near our mouths after we ate the "tenderloin".) Will never eat cat again after that experince! Even with BBQ sauce and Tobasco it tasted like sh!t, and the aroma was enough to gag a maggot.

Don't belive everything old Loius says he's from Jamestown ND and anyone thats ever been there will atest to the fact that the place makes you a little screwy!:)
 
haha, thanks guys, first I have to get a coyote, then I may or may not try to make jerky, and was just curious as to what you guys think, I think with enough seasons and a good recipe, it wouldn't be that bad, but I could be sorely mistaken,

As I said in another post, many years ago the late Bob Carson from the Arizona Bear Society fed me some 'yote jerky. It was friggin good! At least until he told me what it was! LOL! Bob used to make jerky from everything - primarily bear and coyote tho. He told me he had done Mtn Lion as well and that it came out really good. I never had the opportunity to try it tho. Then again I have spent time in Korea - not asking what the food was when I was eating. To each his own! Regular Jerky receipe should work well, Bob's receipe is in "THE CLUBHOUSE" forum. Good eating! lol
