I have always cut my own, until last year. I was crunched for time, and to be honest, too lazy to deal with it. I tried a new guy here in town, and I must say I was incredibly impressed. Based on that experience, I will likely never process my own unless time and location require it for some reason.
My time is worth more to me than what I paid to have this deer processed, and this is the first time in my marriage where my wife and kids actually preferred the meat as opposed to tolerated it.
