I have eaten just about everything that bleeds in north america, and I will say, anything canine or feline is repulsive to the taste. I was a chef for 13 years, and I can make an old boot taste like a smoked pig before I could make either of those species taste like anything more than bad jerkey marinated in stale urine. And for anyone interested, I know lots of ways to make coon, possum or muskrat that I think are quite tastey. The key is marinades made with either whiskey or red wine, dont skimp on the salt and cook at low heat with frequent basteing. Wrapping meat in bacon always helps too. Like I said, if anyone wants to know how to cook something most people wont eat, get a hold of me, chances are I can steer you in the right direction.
